The Chayote fruit is eaten as a vegetable in different parts of the world. In India, the use of Chayote fruit is not common in all states. Its use is limited to East and North East India and some parts of southern India. In Siliguri the Chayote is mostly brought from the Hills. Since use of chemical pesticide and fertilizer is not common in the hills, much of the Chayote we get in Siliguri is organic in nature though they are not certified as such. The Chayote is rich in Vitamin C and Amino Acid and is said to have medicinal properties.
Raw green jackfruit, with its subtle taste and meat-like texture, serves as an excellent substitute for meat in various dishes.
